REAL Coconut Dark Chocolate Bars- Dates, Almond Flour, COCONUT, Dark Chocolate, Healthy- No Bake

 Coconut Dark Chocolate Bars are MY FAVE! Originally, I thought of Unreal bars when I made this recipe, but in reality, they taste EXACTLY like Theo brand coconut bars (which I personally like WAY better anyway). But I do have to say, the dark chocolate coating those brands use is no where near the quality of this. My favorite chocolate is Endangered Species 88% dark smooth and velvety (what great adjectives, right? Makes me want chocolate right now!). The crispness of this chocolate over the coconut date almond flour candy is whats actually unreal! So good. Soo soo good. All that said, I honestly buy whatever fair trade chocolate is on sale. I aim for $2.50 a bar max. Whole foods usually always has one on sale. 

My son helped me with this short video by stealing my coconut bar just after I'd turned the camera on. lol (poor kid crashed his bike into a tree, that's where that cut came from...he's fine.)

Coconut Dark Chocolate Bars

6 dates pureed in 1/4 cup hot water

Mix in 3/8 cup almond flour

1 1/2 cup shredded unsweetened coconut 

Mix well until it comes together (approx 2mins)

1 1/2 dark chocolate bars of choice ( I go with what’s on sale)

Break up and melt in microwave in 30 second intervals.

Shape and coat bars what ever size you want.

Chill 10-20 mins.

Enjoy! :)

I keep them in the fridge, but have been known to toss a few in my purse for snacks on the go.
